Spiced Cauliflower Sweet Potato and Kale Pie

Serves 4 // Cooking Time: 40 minutes

Ingredients:

Cauliflower Florets   200g 

Curly Kale   120g

Filo Pastry 250g

Sweet Potato   160g 

Chopped Tomatoes Tins   160g

Coriander Whole   12g 

Onions Large   120g 

Chipotle Paste   12g 

Pureed Herbs Jar Garlic  8g 

Raisins  20g 

White Wine Vinegar   1 tsp 

Black Pepper Ground   1 tsp

Salt   1 tsp  

Chickpeas in Water (Tinned)   1 tin

Method:

1. Blanch kale

2. In thick based pan, add half the olive oil, add shredded onions, garlic, chipotle paste and sweet potatoes. sweat off without colour.

3. Add chopped tomatoes and white wine vinegar and reduce

4. Take off heat and add cauliflower florets, raisins and blanched kale, mix well. Allow to cool.

5. form into ten individual pies with the filo pastry, brush with remaining olive oil and bake at 180c until golden brown and a core temperature of at least 82c is achieved.
