Raw Cocoa Protein Balls

Makes 10 balls.

Easy.

Cooking and preparation time: 10 minutes (6 hours chilling)

Ingredients:

  • 70g Cashew Nuts 

  • 60g Blanched Hazelnuts 

  • 70g Almonds 

  • 55g Clear Honey 

  • 30g Cocoa Powder 

  • 45g Grated or Desiccated Coconut 

  • 30g Dried Cranberries 

  • 15g Dried Figs 

  • 15g Dried Dates 

  • 10g Sunflower Seeds 

  • 2g Ground Cinnamon 

  • 7.5g Vanilla Essence 

  • 15ml Hot Water 

Method:

  1. In a food processer, place all dry ingredients, but using only 35g of the coconut. Blitz to a course meal consistency.

  2. Mix the honey, hot water and vanilla together. Turn the food processor on, and gradually add the wet ingredients to the dry mix until thoroughly mixed – you may need to finish mixing the liquid in by hand.

  3. In a hot pan, lightly toast the remaining coconut.

  4. By hand, roll the mix out into 10 balls, making sure to firmly press it together so that it forms balls that will hold together well.

  5. Roll in the toasted coconut and place on a tray lined with greaseproof paper.

  6. Chill in the fridge for a minimum of 6 hours.
