Sweet Potato and Ginger Soup
Serves 4.

Cooking and preparation time: 40 minutes
Ingredients:
1 Tbsp. Oil
1 Tbsp. Fresh ground ginger
3 Garlic cloves
3 Medium Sweet potatoes, peeled
1 Large Carrot , peeled and chopped
1 Large Onion, diced
1 Medium Potato, peeled
800ml Vegetable stock
Season with salt and pepper
Fresh herbs of choice (to garnish)
Method:
Heat the oil in a suitable pan, sweat the vegetables off with the ginger and garlic for 3-4 minutes.
Add the vegetable stock and bring to the boil.
Simmer until all the vegetables are tender.
Remove from heat and blend into a smooth soup.
Season to taste, garnish with herbs and serve.
