Blueberry and Banana Layered Granola Bars

Makes 10 Bars.

Cooking and preparation time: 35-40 minutes

Ingredients:

For the Oat Layers

  • 225g rolled oats

  • 1-2 very ripe mashed banana (medium-large)

  • 25g ground almonds (or any other ground nuts)

  • 3 tbsp water

  • 1 tbsp butter

  • Pinch of sea salt

  • Optional- 1 tsp cinnamon, vanilla extract or lemon zest

    For the Blueberry filling

  • 200g fresh blueberries

  • 1 tbsp cornflour

  • Optional- 1 tsp vanilla extract, almond extract or lemon zest


Method:

  1. Preheat the oven to 180C. Line an 8-inch square baking tray with greaseproof paper, and spray or lightly coat with butter or non-stick cooking spray.

  2. For the oat layers- in a food processor, blitz 135g of oats into a fine flour. Then in a large bowl, using a fork combine the oat flour, remaining 90g oats, mashed banana, ground nuts, melted butter, water, salt, and flavourings of your choice until combined and crumbly.

  3. For the filling – in a large bowl, using a fork, coarsely crush the blueberries. Sprinkle over the cornflour and optional flavourings if using. Mix well.

  4. To assemble, firmly press half of the oat mixture into the prepared pan, patting down. Evenly spread over the blueberry filling, and to finish, coarsely crumble over the remaining oat mixture.

  5. Bake in the pre-heated oven for 25-30 minutes, until the filling is bubbling and the topping is golden.

  6. Cool completely in the pan on a wire rack. Once cool, cut into bars.
