Five Bean Cassoulet and Sage Soup

Cooking and preparation time: 40 minutes
Ingredients:
400ml Veg Stock
40g Tomato Puree
1 Tin Chopped Tomatoes
60g Red Onions, finely diced
30g Leeks, sliced
30g Red Pepper, finely diced
1 Tin Five Bean Salad (in water)
80g Fine Beans
Fresh Sage
Handful Fresh Basil
Salt and pepper
Method:
Place the vegetable stock, tomato puree, chopped tomatoes, onions and leeks into a thick bottom saucepan. Bring to the boil and simmer for 25 minutes.
Add the peppers, mixed beans, green beans, sage and basil to the soup and simmer for a further 10-15 minutes. Taste and adjust the seasoning as necessary. If necessary, loosen with a little more stock.
Serve in deep bowls and top with a drizzle of olive oil.
