Turnip and Potato Patties

Cooking and preparation time: 50 minutes
Ingredients:
2 Tbsp. Oil
3-4 Small Potatoes, diced
2-3 Turnips, diced
60g Plain flour
1 Large Egg
2-3 green scallions
Ground white pepper, to taste
Method:
Wash the potatoes, scallions and turnip well to remove any dirt.
Boil the turnip and potato together until tender for approx. 20 minutes. Drain and mash cooked vegetables well with a masher.
Mix in the scallions, egg, flour and pepper. Heat the oil in a frying pan and spoon in the pattie mixture.
Flatten each one with a the back of the spoon. Cook until golden brown on each side. Serve.
