Veggie Black Bean Tortillas

Serves 4.

Easy.

Cooking time: 25 minutes

Ingredients:

  • 1 Avocado, sliced 

  • 4 Wholegrain tortillas 

  • 1 Pepper, sliced 

  • 1/3 Cup (90 g) Sour cream 

  • 1 Tin Kidney beans, drained and rinsed  

  • 1 Tin Black beans, drained and rinsed 

  • 1 Tbsp. Chipotle sauce  

  • 2 Tsps. Fajita spice mix  

  • 1 Red onion, diced 

  • 1 Tsp. Oil  

Method:

  1. Preheat oven to 160°C.   

  2. Add drained beans, fajita spice mix, oil, peppers and onions to a baking tray and mix well. Roast for 15 minutes or until softened.  

  3. Assemble the tortilla: take the tortilla wrap, add chipotle sauce and the spiced beans, peppers & onions.

  4. Top with avocado & sour cream.
