Apple Olive Oil Cake

Cooking and preparation time: 65 minutes
Ingredients:
2 large eating apples, peeled and finely chopped
1 Orange, juiced
3 Cups Plain flour
1/2 Tsp. Ground cinnamon
1/2 Tsp. Ground nutmeg
1 Tsp. Baking powder
1 Tsp. Baking soda
1 Cup Sugar
1 Cup Olive oil
2 Large Eggs
2/3 Cup Raisins, pre-soak in warm water
Icing sugar for dusting
Method:
Preheat oven to 180 C. Line a 9-inch cake tin with parchment paper.
Place the chopped apples in a bowl and cover with orange juice; just enough juice to toss and coat apples so as to prevent browning.
In a large mixing bowl sift together the flour, cinnamon, nutmeg, baking powder and baking soda.
Whisk together sugar and olive oil on low for 2 minutes until well-combined.
Then add the eggs, one at a time, and contin-ue to mix another 2 minutes until mixture increases in volume
In the large mixing bowl with the dry ingredients, make a well in the middle of the flour mixture. Add the wet mixture (the sugar, oil and eggs) into the well. Using a wooden spoon, stir until just blended.
Drain the raisins and the apples and add to the batter and mix with spoon until well-combined.
Spoon thick batter into the pan, and level the top with the back of your wooden spoon. Bake in 350 F/ 180 C for 45 minutes or until an inserted skewer comes out clean8Cool completely in pan. When ready, simply lift parchment up to transfer cake into a serving dish. Dust with icing sugar
